How to cook an eggplant in a pan?








Much easier to manage and season than baking eggplant, this pan-frying method requires a stainless steel pan and a bit of creativity: enough to whip up a delicious and healthy dish in no time.
Ingredients Needed for Cooking Eggplant
Cooking eggplant quickly is child's play! For 4 people, here are the quantities you need:

2 large eggplants

2 garlic cloves

1 to 2 tablespoons of olive oil

A large pinch of salt

A pepper mill
Want to add more vegetables to your stir-fry for maximum flavor? Prepare your choice of:

2 tomatoes, seeded and cubed

2 zucchini, finely diced

1 large red bell pepper, sliced
Those with a sweet tooth can combine all these vegetables in a pan, depending on your mood, your hunger, and the number of guests!
Steps to Successfully Pan-Fry Eggplant

Wash your eggplant then cut it into cubes or slices (depending on your mood). Be sure to remove the ends.

Heat your stainless steel frying pan to 2/3 of your burner power. Wait about 2 minutes, then add a drop of water to your frying pan. If it rolls on the surface like a small marble, your surface is hot enough!

Pour one to two tablespoons of olive oil into the pan.

Then add the eggplant and garlic, before reducing the heat to about 1/3 of its maximum power.

Add salt and pepper to taste.

Let the eggplant brown gently on each side, then add the remaining desired ingredients (seasoning, vegetables, onions, etc.)

The vegetables are cooked when they are very tender.

Our tips for seasoning your pan-fried eggplant
Once your dish is beautifully roasted, a wide range of possibilities open up to you. You can spice up your pan-fried eggplant with Espelette pepper, oregano, or even a few chopped basil leaves, depending on your taste!
This recipe is also an excellent base for many eggplant dishes. For example, you can create a delicious Provençal pan-fried dish by combining several vegetables with the eggplant (zucchini, onions, tomatoes), which you can serve on a large platter. Sprinkle with feta cheese for an absolutely irresistible flavor.
Alternatively, for a spicier flavor, you can prepare a very easy recipe: pan-frying the eggplant with coconut milk. Simply add the spices of your choice (curry, turmeric, ginger, etc.) to your eggplant slices, then heat the mixture gently before pouring a carton of coconut milk into the pan. Let it steep for about ten minutes, then serve with white rice and cilantro. A real treat.
For a delicious summer dip, you can also blend the eggplant slices with 2 tablespoons of tahini and the juice of one lemon. Season to taste. You'll end up with a delicious purée, also known as Baba Ganoush, to be enjoyed with pita bread. A guaranteed success!
